Breakfast Tacos


  • 5 each Mission® Medium Soft Taco Flour Tortillas, warmed
  • 1 lbs. Smithfield® Fresh Ground Pork
  • 2 tsp Vegetable Oil
  • 1 tsp Dried Oregano
  • 1 1/2 tsp Ground Cumin
  • 2 tsp Smoked Paprika
  • 1/3 C Water
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • To Coat Non-Stick Cooking Spray
  • 6 each Whole Eggs, beaten
  • 1-2 each Fresh Avocado, peeled and sliced
  • 5 Tbsp Roasted Tomato Salsa, jar
  • 1/2 C +2 Tbsp Pepperjack Cheese, shredded


  1. 1Heat vegetable oil in a non-stick skillet over medium-high heat. Add Smithfield® Ground Pork, brown for 6-8 minutes; drain excess fat and return to skillet. Add oregano, cumin, smoked paprika, water, salt and pepper, reduce heat to medium and simmer for another 6-8 minutes or until liquid has reduced by half. Remove from skillet, reserve warm. Clean skillet and return to medium heat.
  2. 2Coat the skillet with non-stick spray, add beaten eggs, and cook while stirring for 1-1 1/2 minutes or until scrambled, season with salt and pepper. Add 1/4 cup of scrambled eggs to one half of each warmed Mission® Tortilla, top with 1/2 cup of seasoned pork, next top with 3-4 slices of avocado, 1 tablespoons roasted tomato salsa and 2 tablespoon of cheese. Fold into tacos; serve one taco per person along with crispy breakfast style potatoes and fresh fruit. Enjoy!
