Turkey Sausage Breakfast Fajitas

These family-friendly breakfast fajitas make a yummy and healthy way to start the day.

Step 1: Warm tortillas

Warm tortillas according to package directions; keep warm.

Step 2: Cook turkey sausage

Meanwhile, into large skillet set over medium-high heat, add 1 tbsp oil. Add turkey sausage and cook, stirring occasionally, for 5 to 8 minutes or until browned and cooked through. Using slotted spoon, transfer to medium bowl and keep warm.

Step 3: Cook fajita vegetables and seasonings

Into same skillet, add remaining oil, onion, green pepper, red pepper and yellow pepper. Cook, stirring occasionally, for 2 to 3 minutes or until starting to soften. Stir in chili powder, cumin, paprika, salt and pepper. Cook, stirring occasionally, for 2 to 3 minutes or until peppers are tender. Stir in lime juice.

Step 3: Assemble fajitas

Divide turkey and peppers mixture among tortillas. Divide avocado, 1 tbsp salsa and cheese evenly on top. Roll up to envelop filling.

Step 4: Serve

Serve with lime wedges and remaining salsa.

Tips: Substitute Monterey Jack cheese with crumbled cotija cheese if preferred.

Substitute turkey breakfast sausage with pork, beef or plant-based sausages if preferred.
